Jean-Marc & Hugues Pavelot – Savigny-lès-Beaune

For multiple generations the Pavelots have been among the leading producers in Savigny-lès-Beaune, a picturesque village just north of Beaune and below the flanks of the hill of Corton. Jean-Marc and his son Hugues now run the domaine in tandem, with Hugues having joined in 1999. They own just under 30 acres in Savigny, Pernand-Vergelesses and Beaune, spread across dozens of small parcels. They produce both red & white villages wines from Savigny, and a total of eight different 1er Crus – each of which has its own distinct personality.

The Pavelot wines are always rich and full of fruit, yet understated and elegant at the same time. They work the vineyards without herbicides, preferring to plough in the traditional manner. The villages wines see no new oak, and the 1er Crus about 15-30% depending on the vineyard and the vintage. Recognized around the world as the source of some of the best values in all of Burgundy, we are proud to represent the distinctive wines of Domaine Pavelot.

2009 Savigny-lès-Beaune $40 >>

(this derives mostly from Guetottes, which abuts Les Guettes). This is also aromatically quite pretty with ripe red berry and plum aromas liberally laced with ample amounts of Savigny-style earth that continues onto the round, supple and appealing flavors that culminate in a balanced and naturally sweet finish. Lovely and fashioned in Pavelot’s usual understated style. (87-90)/2014+

2009 Savigny-lès-Beaune, les Narbantons 1er $55 >>

This possesses a step up in ripeness with aromas of cassis, plum and plenty of warm earth that merge into rich and admirably well-concentrated flavors that are shaped by firm and phenolically mature tannins as well as a complex, intense and mouth coating finish. This isn’t as fine as the Bressandes but it’s ever-so-slightly longer and complex. (90-93)/2017+

2009 Savigny-lès-Beaune, les Serpentières 1er $55 >>

(from a .17 ha parcel). A deft touch of wood frames more complex if less elegant aromas of red and dark pinot fruit. The rich, generous and quite forward medium-bodied flavors possess a sophisticated mouth feel with well-integrated tannins and fine finishing detail and persistence. Lovely juice that combines mild minerality with moderate earth influence. (89-92)/2016+

2009 Savigny-lès-Beaune, les Dominodes 1er $65 >>

(two-thirds of the vines are between 70 and 80 years of age and the remaining vines are approximately 20+ years old). This is perhaps the ripest wine in the range with a liqueur-like nose of black cherry, earth and underbrush hints that introduce rich, serious and concentrated flavors that possess an abundance of mid-palate extract as it almost completely buffers the otherwise very firm tannic spine, all wrapped in a palate staining finish. This stunning effort should reward at least a dozen years in the cellar and drink well for another decade thereafter. (92-94)/2021+  A “SWEET-SPOT” Selection

2008 Savigny-lès-Beaune:  (this derives mostly from Guetottes, which abuts Les Guettes).  A pungently earthy nose carries notes of game and underbrush along with the somber dark berry fruit that introduces supple, round and almost easy middle weight flavors that culminate in an equally earthy and attractively sappy finish.  Again, this is not especially complex but it is certainly agreeable.  (86-88)/2013+
